gluten-free zucchini walnut bread

Ingredients

  • 2 large eggs
  • 125g coconut sugar
  • 250g gluten-free flour

Note: Doves Farm do a good ready-prepared blend, which uses rice, potato, tapioca, maize and buckwheat flours. Bob's Red Mill Gluten-Free Flour is also a good choice.

  • 1 and 1/2 tsp baking powder
  • zest of 1/2 lemon, finely grated
  • 2 tbsp sunflower oil
  • 50g natural yoghurt
  • 200g zucchini/courgettes, coarsely grated
  • 100g walnuts
  • 2 large eggs
  • 3/4 cup coconut sugar
  • 1 and 2/3 cup gluten-free flour

This zucchini walnut bread recipe took my mom and I an entire summer to perfect in California. After several batches of not-so-good bread, we came up with this hit recipe. It is the perfect combination of savoury and sweet, with the walnuts adding a soft crunch throughout. It’s a great way to hide extra greens into your cooking for fussy eaters! 

Pre-heat the oven to 170C/338F. Grease and line a 2lb-loaf tin.

Using an electric whisk, thoroughly combine the eggs and coconut sugar in a bowl. Fold in the flour and baking powder, followed by the lemon zest, sunflower oil and natural yoghurt.

Roughly chop the walnuts and add to the bowl, along with the grated zucchini/courgette. Mix so everything is well incorporated.

Pour the mixture into the prepared tin and place in the oven. Cook for 40-50 minutes or until a skewer inserted into the cake comes out clean.

Leave to cool in the tin for 10 minutes, then remove and place on a cooling rack to cool completely.
