  • 1/2 avocado, de-seeded with flesh removed
  • 100g (one large bundle) watercress
  • 4 large stems or 5g (approx. 40 leaves) fresh mint
  • 100g baby spinach leaves
  • 30g coriander or 10g picked coriander leaves
  • juice of 1 large lemon
  • 4 tbsp extra virgin olive oil
  • salt and pepper, to taste

  • 3 cups coriander or 1 cup picked coriander leaves

  • salt and pepper, to taste

This intoxicatingly bright creation can be used as a dressing, an accompaniment, a topping or a dip – you choose. It is bursting with flavour and good looks so I always recommend whizzing up a double batch of this green goodness as it won’t last long on the table.

Throw everything in the blender and whizz until smooth. Delicious when served with crudités.
