  • 1 tbsp coconut oil, for spreading
  • 1/4 – 1/2 avocado, de-seeded and sliced
  • 1 large dried red chilli
  • squeeze of lemon juice
  • salt and pepper, to season

This is easily one of my favourite breakfast recipes – it is so easy and straightforward to make, but always leaves me feeling full until lunch.

Toast your rye bread until golden, then spread the coconut oil on top until it melts in.

In a small bowl, mix the avocado flesh with a squeeze of lemon juice and season. Layer it on top of the bread.

Chop the dried red chilli into small pieces and sprinkle on top. Season with salt and pepper, and serve.
