  • 425ml unsweetened coconut milk (from carton)
  • 120ml water
  • 1 tbsp flax seeds
  • 1 tbsp chia seeds
  • 1 tbsp desiccated coconut
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp maca powder
  • Dash of vanilla essence
  • Drizzle of honey (optional)
  • Handful of blueberries

My children call this recipe “gingerbread porridge” thanks to the rich cinnamon, nutmeg smell that infuses your whole kitchen with its comforting fragrance. Plus adding maca is also thought to boost energy levels – perfect for first thing in the morning!

Add all ingredients to the saucepan, mix together well, cook on a medium heat until liquid has been absorbed and porridge is a thick consistency. Serve warm and save the rest in the fridge for the next day or an afternoon snack.
