Healthy Fruit Crumbles

Who doesn’t love a fruit crumble? The problem is that they’re usually loaded with sugar and gluten. Here’s my take on this classic recipe. Play around and have a go at making it your own.

5 apples, chopped into quarters

1 cup blueberries (fresh or frozen)

1/2 lemon, squeezed

1 tbsp maple syrup

2 tsp vanilla essence

2 cups jumbo gluten-free oats

1 cup ground almonds (or almond meal)

1/2 cup walnuts, crushed (or almonds, brazil nuts, etc)

1/2 cup flax seeds

1/4 cup – 1/2 cup unsweetened desiccated coconut

Pinch of cinnamon

Pinch of nutmeg

2 tbsp xylitol

1/2 cup coconut oil
