Give Meatless Mondays (or any day of the week for that matter) a try with this fast, simple recipe for roasted vegetables. It is a one-dish meal that promises to be satisfying and will quickly become a weekly favourite.

2 courgettes (zucchini), chopped

2 red, yellow or orange peppers, de-seeded and chopped

2 carrots, chopped

1 yellow onion, diced

1 red onion, diced

2 fennel bulbs, chopped

3 garlic cloves, sliced

Handful of basil leaves, chopped

Top with 1/4 cup roasted pine nuts (unless allergic) and 1/2 cup crumbled feta cheese (unless vegan)

Drizzle of olive oil

Sprinkle of salt

1 tbsp oregano (or thyme, basil, chilli)
