Ingredients

  • 2 courgettes (zucchini), chopped
  • 2 red, yellow or orange peppers, de-seeded and chopped
  • 2 carrots, chopped
  • 1 yellow onion, diced
  • 1 red onion, diced
  • 2 fennel bulbs, chopped
  • 3 garlic cloves, sliced
  • handful of basil leaves, chopped
  • top with 30g roasted pine nuts (unless allergic) and 65g crumbled feta cheese (unless vegan)
  • drizzle of olive oil
  • sprinkle of salt
  • 1 tbsp oregano (or thyme, basil, chilli)
