Ingredients

  • 200g gluten-free rolled oats
  • 250g coconut yogurt (or greek yogurt if you prefer and aren't dairy-free or vegan)
  • 50g chopped walnuts
  • 20g coconut flakes
  • 75g fresh blueberries
  • 1 apple, grated
  • 2 tbsp goji berries
  • 1 tbsp flax seeds
  • juice of 1 lemon
  • 1/2 tsp ground cinnamon
  • pinch of ground cloves
  • 1 tsp vanilla essence
  • 750ml-1 litre coconut milk

  • 1/2 cup fresh blueberries

Instead of turning to sugar-laden cereal or toast with sugary spreads, start rotating Bircher muesli into your breakfast routine. I usually make it on a Sunday afternoon or in the evening during the week. It tastes best when it sits overnight in the fridge and it lasts 3 days when refrigerated – it’s a breakfast problem solver!

Mix all the ingredients together in a big bowl. It should be very moist because the oats will absorb a lot of liquid, but add more milk if needed or a little less if you prefer a thicker consistency.

Cover the bowl and place it in the refrigerator overnight, or for as long as you have.

Give it a good stir when you are ready to serve. Drizzle a bit of honey or maple syrup over the top if absolutely necessary.

Store in the fridge. It will stay fresh for 3 days.
