Ingredients
- 1/2 avocado, de-seeded with flesh removed
- 100g (one large bundle) watercress
- 4 large stems or 5g (approx. 40 leaves) fresh mint
- 100g baby spinach leaves
- 30g coriander or 10g picked coriander leaves
- juice of 1 large lemon
- 4 tbsp extra virgin olive oil
- salt and pepper, to taste

This intoxicatingly bright creation can be used as a dressing, an accompaniment, a topping or a dip – you choose. It is bursting with flavour and good looks so I always recommend whizzing up a double batch of this green goodness as it won’t last long on the table.
Throw everything in the blender and whizz until smooth. Delicious when served with crudités.
