Ingredients

  • 50g coconut oil
  • 2 tbsp almond butter
  • 3 tbsp maple syrup (and a drizzle on top)
  • 2 ripe bananas, roughly mashed
  • 1 pear, grated
  • 250g whole jumbo oats
  • 80g mix of pumpkin seeds and sunflower seeds
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp maca (optional)
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut oil
  • 2 tbsp almond butter
  • 3 tbsp maple syrup (and a drizzle on top)
  • 2 ripe bananas, roughly mashed
  • 1 pear, grated
  • 3 cups whole jumbo oats
  • 1/2 cup mix of pumpkin seeds and sunflower seeds
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp maca (optional)
  • 1/2 tsp vanilla extract

My kids call these pear almond flapjacks “Jack Flaps” just for fun! They are a terrific after-school snack, a healthy treat, or even part of a healthy breakfast. Quick to make and quick to disappear. 

Preheat the oven to 180C/350F and line a 20cm/8-inch square tin with baking parchment.

In a saucepan melt the coconut oil, almond butter and maple syrup.

Put the bananas, pear and remaining dry ingredients in a large mixing bowl and stir to combine. Once the liquids have melted together, pour them over the dry ingredients and stir well.

Tip the mix into your lined tin and press down with the back of a spoon to smooth and even out.

Bake in the oven for 20 minutes, then remove and allow to cool in the tin before slicing into 10 bars to serve.
