- 2 tsps ground sriracha (more or less depending on your spice threshold)

I swear by simple veggie side dishes that are big on flavour, small on prep. Sriracha definitely has a kick to it, so tone it down if you’re cooking for little ones. This quick dish is a terrific accompaniment to fish, eggs or even stirred into pasta.
Wash and slice the squash. Heat the coconut oil in a medium sauté pan. Add the squash and sprinkle in the sriracha.
Cook in the pan, stirring frequently, for 10-15 minutes over medium heat. Don’t let them get soggy, just al dente. Plate in a serving dish and sprinkle the coriander/cilantro on top.
