Ingredients

  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 packs of firm tofu, well drained and crumbled by hand
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp curry powder
  • 2 handfuls fresh spinach, chopped
  • 5 leaves basil, chopped
  • 15 cherry tomatoes, chopped in half
  • 1 tsp salt
  • 1/2 tsp pepper

We are all about breakfast in our house and are always looking for new, interesting recipes that start the day with flavour and fuel. Tofu scramble is a great alternative (or break) from scrambled eggs and this recipe is an especially flavourful and satisfying way to start your morning. If you’re a spice junkie, add some cayenne or sriracha. Sliced avocado on top is another delicious addition too.

In a large frying pan, heat olive oil and add onion and garlic. Cook until soft and fragrant. Then crumble the tofu with your fingers into the pan and add in all the spices and mix thoroughly until all of the tofu is yellow. Stir in the chopped spinach and basil.

In another small pan, put in a drizzle of olive oil and add the chopped tomatoes – cook for a few minutes just to soften them a bit. Then fold the softened tomatoes into the tofu mixture. Serve immediately and add salt and pepper (or more spice) as desired.
