Ingredients

chia pudding:

  • 60g chia seeds
  • 2 tbsp cacao powder
  • seeds from 1/2 vanilla pod
  • 1 tbsp honey
  • 250ml coconut milk

poached plums:

  • 4 plums
  • 2 tbsp maple syrup
  • 1 star anise
  • 3 tbsp water

chia pudding:

  • 1/3 cup chia seeds
  • 2 tbsp cacao powder
  • seeds from 1/2 vanilla pod
  • 1 tbsp honey
  • 1 cup coconut milk

poached plums:

  • 4 plums
  • 2 tbsp maple syrup
  • 1 star anise
  • 3 tbsp water

If you like chia seeds and you like dessert, this one’s for you… Delicious texture, richness and flavours topped with the indulgence of perfectly poached plums.

Chia pudding

In a bowl, mix the chia seeds, cocoa powder, vanilla seeds and honey together, then slowly whisk in the coconut milk. Leave to set overnight – either in the dishes you will present it in, if having a dinner party, or in one big bowl if you plan to serve up when ready.

Poached plums

Halve 4 plums and de-stone. Add them to a saucepan so they are snug. Add the star anise, broken up, the maple syrup and water and simmer until tender. This will take around 20-25 minutes, depending on how ripe they are in the first place. (Invariably they are not that ripe.) When ready, remove from heat, let cool slightly, and add on top of the chia pudding.
