Brown rice is a fantastic staple to use in everything from stir fries and soups to salads and “bowls”. Here is a foolproof cooking technique, plus a simple little miso trick that gives plain brown rice a terrifically rich and earthy flavour you’ll love.
In a medium-sized saucepan with a tight-fitting lid, combine the rice, water, salt and miso paste. Bring it all to a boil. Stir a few times until miso is dissolved, cover and reduce heat to low. Simmer for 40-45 minutes. (Don’t be tempted to lift the lid or stir!)
Remove from heat and let stand, covered, for 5 minutes. Then fluff with a fork and serve however you like. It tastes delicious with greens and with some sesame seeds sprinkled through it!
