Ingredients

  • 125g pecans
  • 125g almonds
  • 4 tbsp olive oil or coconut oil, melted
  • 2 tbsp maple syrup
  • 1/2 – 1 tsp cayenne pepper, depending on preference
  • 1/2 tsp cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • 1 tsp salt (optional)
  • 1 and 1/4 cups pecans
  • 1 and 1/4 cups almonds
  • 4 tbsp olive oil or coconut oil, melted
  • 2 tbsp maple syrup
  • 1/2 – 1 tsp cayenne pepper, depending on preference

  • 1 tsp ground nutmeg
  • 1 tsp ground cloves

I always know the seasons are changing when I start making these delicious snacks. The smell when they’re cooking is heavenly and once you’ve tried them, you’ll never stop at one. I recommend making a double batch!

Pre-heat oven to 175C/335F/Gas mark 3.

In a medium bowl, mix the pecans and almonds with olive oil or melted coconut oil and maple syrup. Use your hands and mix well, then add all the spices – and salt, if you’re using it – and give it another good mix.

Spread the coated nuts on a medium-sized baking sheet (covered with a piece of parchment paper) and cook for 15-20 minutes in the pre-heated oven, stirring a few times while cooking. Be careful not to overcook and burn them.

Let the nuts cool and enjoy! These make wonderful snacks to pop on the table for when guests come round, to give to your children as a treat after dinner, or to pack in a Tupperware tub for when you’re on the move. When stored in an airtight container, they will last for up to one week.
