Ingredients

for the peas:

  • 600g sugar snap peas
  • 1 tbsp sesame seeds, toasted

for the dressing:

  • 2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp tamari
  • 1 1/2 tbsp toasted sesame oil
  • 1 garlic clove, peeled and minced
  • 1 large shallot, peeled and minced
  • 1/2 tsp coarse salt
  • 1/2 tsp ground black pepper

for the peas:

  • 6 1/2 cups sugar snap peas
  • 1 tbsp sesame seeds, toasted

for the dressing:

  • 2 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp tamari
  • 1 1/2 tbsp toasted sesame oil
  • 1 garlic clove, peeled and minced
  • 1 large shallot, peeled and minced
  • 1/2 tsp coarse salt
  • 1/2 tsp ground black pepper

Ready in a snap, these are a quick and easy side dish to prepare – plus they go with almost anything you might be serving as a main.

Drop the snap peas into boiling water for 30 seconds. Drain and rinse under cold water. Drain again and pat dry. Transfer to a large bowl.

For the dressing, whisk the rice vinegar, tamari, sesame oil, garlic, shallot, salt and pepper together well. Pour over the snap peas and toss to coat well. 

Season to taste with more salt and pepper if needed and sprinkle the toasted sesame seeds on top. Serve at room temperature.
