sesame and sweet potato chipotle dip

Ingredients
- 1 medium to large sweet potato
- 1 tbsp ghee (melted)
- 2 tsp sesame oil
- 1/4 - 1/2 tsp dried chipotle chilli (increase depending on how hot you want it - you can also sub for regular chilli flakes)
- Pinch of Himalayan or sea salt
- Juice of 1 fresh lime
- 190ml filtered water
- 1 medium to large sweet potato
- 1 tbsp ghee (melted)

- 3/4 cup filtered water

Sweet potatoes are versatile, filling and packed with flavour. This recipe is another great way of using them in your cooking – it has a delicious warmth and smokiness to it thanks to the chilli.
Pre-heat the oven to 200C/390F.
Peel and cut the sweet potato into 2-inch pieces, spread on baking paper and drizzle with the melted ghee. Roast in the oven for 25 minutes.
Remove from the oven and set aside.
In a food processor, add the sweet potato and all of the remaining ingredients and process until you have a thick dip-like texture. Add more water to thin if preferred.
To serve, try it with sliced avocado and chia bread.
