warming “eggnog” smoothie

Ingredients

  • 500ml unsweetened almond milk
  • 125ml fresh water
  • 1 whole apple, unpeeled and cut into pieces
  • 1 banana, peeled and sliced (frozen or fresh)
  • 4 ice cubes
  • 2 tsp chia seeds
  • 20g rolled oats
  • 2 dates, pitted
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • pinch of ground cloves
  • 15g/10 pecan halves (optional, but adds great flavour)
  • 2 cups unsweetened almond milk

It wouldn’t be Christmas without eggnog, but traditionally it is loaded with milk, double cream, eggs, sugar and alcohol – a lethal combination for the waistline and the morning after. Here’s my trimmed down vegan version that is packed with plant-based goodness and is still equally delicious and warming.

Whizz it all together in a blender until smooth. Serve your “eggnog” smoothie with a dusting of ground cinnamon over the top. Enjoy!
