Ingredients
- 300g cooked quinoa, cooled
- 1 can of italian butter beans, rinsed
- 1/2 avocado, skinned, pitted and sliced
- 2 handfuls of pomegranate seeds
- fresh basil leaves, washed and ripped
- salt
- pepper
- extra virgin olive oil
- optional: parmigiano or goat’s cheese (not df, v, ve)
