quick roasted veggies
Ingredients
- 2 courgettes (zucchini), chopped
- 2 red, yellow or orange peppers, de-seeded and chopped
- 2 carrots, chopped
- 1 yellow onion, diced
- 1 red onion, diced
- 2 fennel bulbs, chopped
- 3 garlic cloves, sliced
- handful of basil leaves, chopped
- top with 30g roasted pine nuts (unless allergic) and 65g crumbled feta cheese (unless vegan)
- drizzle of olive oil
- sprinkle of salt
- 1 tbsp oregano (or thyme, basil, chilli)
