  • 400g-600g cooked quinoa, cooled
  • handful of black olives, pitted
  • small bowl of cherry tomatoes, halved
  • handful of feta cheese, crumbled
  • pine nuts, toasted
  • fresh mint leaves, roughly chopped
  • drizzle of olive oil
  • pinch of salt
  • pepper
  • 2-3 cups cooked quinoa, cooled
  • handful of black olives, pitted
